| Leek pie |
Delicious recipe for leek pie with potato, onion and cheese (optional) in homemade crust.
Preparation: 1 hour, Baking: 1 hourThe crust is light, no eggs, crisp, and quite easy to make, even for someone who has never tried before.
It is also vegetarian and if we skip the cheese, it becomes vegan without losing in taste!
Ingredients:
For the filling:
3 large potatoes
4 cups of leeks in slices
4 onions in slices
4-5 clones of parsley
4-5 clove fennel
300g feta cheese (optional)
Olive oil
Salt, pepper
For the crust:
500g of flour (and a little more)
1.5 cup of lukewarm water
2 cups of olive oil
1/2 teaspoon of salt
Directions:
In a large bowl, mix the flour with the salt.
Make a small pit and add a small cup of olive oil and the water.
Mix and knead until the ingredients unify into a smooth dough..
Divide it into six equal balls and let them aside, covered with a towel in a warm place as you prepare the filling.
Cut the onions and the white part of the leeks into slices.
Chop the parsley and the fennel.
Rinse and cut the potatoes into pieces. Put them in water to boil.
In a deep frying pan, put half a cup of olive oil and sauté the onions and the leeks.
As soon as they wither, pour half a glass of white wine and stir.
Add salt and let the liquids diffuse. Remove from fire.
Melt boiled potatoes with a fork inside a wide bowl.
Add the mixture of onion and leek,the chopped herbs, the cheese sliced cut into pieces and some pepper. Mix well.
Bake for about 1 hour at 160 °C.
Allow the pie to cool for at least 1/2 hour before cutting and serving.
