Healthy salads for lunch:
Lets mix fresh green veggies with colorful beetroot, legumes and dried fruits!Ingredients :
1 cup boiled beans
4 lettuce leaves
1 small cucumber
1 fresh onion
2 beetroot heads
1 cup chopped broccoli
A few leaves of arugula
A handful of raisins
1 tbsp sunflower seeds (peeled)
1/2 cup Olive oil
1 tbsp honey
1 tbsp lemon
1 tbsp red vinegar
Boil the beans. Also boil the beetroots and cut them into pieces. Chop the vegetables. Mix well in a salad bowl, along with the raisins and the sunflower seeds. In a cup add the olive oil, the honey, the lemon and the vinegar and mix well with a tsp or a beater. Pour all over the salad and mix well.
