Tomato marmalade

Tomato marmalade

Sweet and bright red colored, tomato jam is definitely one of the most delicious jams you've tasted!


We may use it mainly in salads and meals, but tomato is actually a fruit by which we can make a beautiful jam.
Ingredients:
2.5 kg tomatoes
6 cups of sugar
1 small sprig of pelargonium (optional but gives aroma, so try not to skip it)
1 teaspoon of lemon juice
Directions:

Put the tomatoes in hot water for a few minutes.
Peel them and cut them into pieces, removing the seeds.
Squeeze them in a colander, over a bowl, to remove most of the liquids. Keep juice aside.
By this quantity of tomatoes you will get about 1 to 1.2 kg drained and seeds-free tomato flesh.
Put the tomatoes in a saucepan and mash them with your hands in smaller pieces.
Add the sugar, cover with a towel and let the pot aside for 2 hours.
Then add the tomato juice and the pelargonium.

Put the pot over medium heat and let it boil, stirring constantly.

When it starts to boil, skim the thick foam of the surface.

Do not worry if the scent at first resembles to a tomato sauce. At the end, the result will be much different!

After about 1 hour of boiling, the jam should start to thicken.
Then add the lemon juice, mix and remove it from the fire.
You will know that it is ready when it is no longer watery but more like a viscous mass that sticks on the spoon. 

Once the tomato jam has cooled down, place it in sterile jars, cover immediately and turn the jars upside down for half an hour.
