Watermelon pie

Watermelon pie! A summer dessert that can be served at any time, plain or with garnished with vanilla ice cream! 

I had found this recipe a few years ago in a local magazine and since then I have try it several times. Recently I discovered that is a dessert recipe that comes from Milos island.


Ingredients: 
About 1 kg of watermelon (the only flesh, without the peel)
2 cups of flour
1/2 cup of brown sugar
1 cup of honey
1/2 cup olive oil
Sesame seeds

Directions: 
Cut the watermelon into small pieces, removing carefully all the seeds.
Squeeze the flesh of the watermelon over a strainer to remove all the liquids, making sure to save them in a bowl (it is very nice juice, drink it afterwards!)
Put the strained watermelon in a large bowl, add the flour, the sugar, the honey and 3/4 of the olive oil.
It can also be made without sugar, replacing it with more honey. 
Stir the mixture very well by hand until it becomes a thick mass.
In a large pan, grease the surface with the remaining olive oil and sprinkle some sesame seeds.
Pour the mixture in the pan and spread it evenly.
The baking pan should be big enough so the cake layer won't be too thick. About 2 fingers thick (thin fingers) is good enough in order to be baked properly. 
Sprinkle on top some sesame seeds, and bake at 180°C (356°F) for 50-60 minutes.

As I said before, the watermelon pie goes nicely with vanilla ice cream! Good luck!
